I recommend you use good stew meat. Preferably some that has not already been chopped. Ask your butcher to cut it fresh.<\/p>\n<p>Ingredients<\/p>\n<p>2 lb. boneless beef cubes<br \/>\n10 c. water<br \/>\n2 tbsp. oil<br \/>\n1 1\/2 c. med. barley<br \/>\n3 carrots, diced<br \/>\n1\/4 c. chopped parsley<br \/>\n1 c. chopped onion<br \/>\n3 lg. stalks celery, including leaves<br \/>\n1 (16 oz.) can tomatoes, cut up<br \/>\n1 tsp. salt<br \/>\n1\/4 tsp. pepper<\/p>\n<p>Directions:<\/p>\n<p>In a Dutch oven, boil beef in water. Skim off foam. Cover and simmer 1 hour. Add remaining ingredients. Simmer uncovered 1 hour until meat and barley are tender.
